Cookies are actually a cake that did not quite make the cut. It was a sweet accident. Long ago there were no ovens with thermostats or gauges to tell how hot the ovens were. The bakers used cake batter to do so, much like we do today when frying foods, we sprinkle a bit of flour in the oil to test the temperature. The results of this test resulted in cookies which derived from the Dutch work ‘koekje’ After the cookie made its appearance, others began experimenting by adding various flavors, nuts or bits of chocolate.
