What is Spelt?

Spelt is a type of wheat. Used alot in the olden days, it is now more of a health food and/or organic type of flour sold in specialty shops and health food stores. It is hardier than plain old wheat and needs less fertilizer to grow it. It is my understanding, that folks with wheat allergies can tolerate spelt flour which is a good thing to know if you or someone you know has grain allergies.
