What is Maltodextrin?

Maltodextrin is a food additive usually made from rice, corn or potato starch. It is used to sweeten or thicken foods and can be found in items like instant pudding. The taste is close to sugar and seems to be easily digested so is used to sweeten teas, coffee and powered soft drinks or as a thickening agent for a number of sauces and salad dressings.
