Head cheese is a gellied block of meat and fat made from the meat on a pig’s head. My grandma makes it, and I can honestly say it’s the most awful smelling stuff when it’s cooking, and it’s not much better when you’re eating it. It’s definately one of those things that you either like, or you don’t. To make it, a pig’s head is split and obviously cleaned, and simmered in a kettle until the meat falls off of the bone. Seasonings are added to it and then it’s poured into pans and refrigerated.
