What is Gluten Free?

Gluten free is a term that means avoiding all grains that contain the protein gluten. Wheat, barley and rye are among the most common grains that contain gluten. Products labeled wheat free are not necessarily gluten free, since current labeling laws do not require companies to disclose barley or other gluten containing grains. A gluten free diet is used to treat Celiac’s disease and many parents of autistic children have found that removal of this protein improves their child’s behavior.
