What is Eosinophilic Esophagitis?

Eosinophilic esophagitis is a condition that causes a build up of white blood cells, the type known as eosinophils to develop in the esophagus. This causes an inflammatory response that is often triggered by certain foods. It is frequently treated much like a food allergy and the sufferer is instructed to avoid foods that are common causes of this condition, such as wheat, egg, milk and soy.
