To smoke a turkey you will need a smoker pit. You can use mesquite or hickory wood or charcoal briquets to smoke the turkey. On the bottom of the smoker put the wood or charcoal and light it. Let it burn for awhile until it smokes. Next, put your pan of water on the shelf above the wood. On the top rack goes the seasoned turkey. You should smoke the turkey for at least 10 hours.
