How to Roast Potatoes?

There is nothing like the simple goodness of roasted potatoes. To roast potatoes, use a Yukon Gold or a Baby Red potato instead of a Russet. Either slice in half or in quarters, coat with olive oil, salt and pepper. Roast in the oven on 425 degrees until outside of potato slices are brown and inside is fork tender. Enjoy!
