Wash peppers and puncture each with a toothpick 3-4 times. Pack tightly in a jar. Mix 1 cup vinegar, 1/4 cup water, 1/4 cup olive oil, 1 tsp. salt, 1 Tbsp. mixed pickling spices. Bring to a boil. Cover peppers with solution up to 1/2 inch from the top of the jar. Seal and process 10 minutes in a hot water bath.
