Tortilla soup is the best and easiest way to satisfy your families appetite! Using your crockpot is the most efficient way, and it makes your house smell good too! Simply combine about one clove of finely chopped garlic and 2 tablespoons of butter. Close the crockpot and cook on high until the butter is melted. Then add 2 14.5oz cans of chicken stock (or broth), 2 14.5 oz cans of stewed tomatoes, 1 cup of salsa (mild, medium or hot depending on you), 1/2 cup of chopped cilantro and half a rotisserie chicken (optional to make it ‘chicken tortilla soup’). Turn cooker to low and cover for 8-10 hours. Top with a spoonful of sour cream, a pinch of cheese, and tortilla chips (optional).
