Tomato juice is easy to make at home and a great way to use up that overabundance of tomatoes from the garden. First, prepare the tomatoes by washing them, removing the stem end and any bruises or blemishes, and cut them into quarters. Simmer the tomatoes on the stove for about 30 minutes or until tender. Once the tomatoes are done, press them through a sieve or a food mill and return the juice to the stove, bringing it to a boil.
