I prefer to use Roma tomatoes, but you can use any type that you may prefer yourself. When getting the tomatoes, try to get them all as close to the same size as possible. There are also a couple different methods tohow to actually dry them, I prefer to use the oven method as you never know how the weather is going t be. Cut your tomatoes in half and lay them sliced side up on a cake pan. Sprinkle with salt and any other herbs you may want. You want bake them in the oven at 200 degrees until they become shriveled and feel dry. this could take anywhere from 6 -10 hours. Remove them from your oven and let them cool. Once they have cooled you can put them in a zip lock bag and refrigerate.
