Ingredients: 1 cup uncooked rice, 2 Tbsp olive oil or butter, 1/2 tsp salt, 1/8 tsp powdered saffron, 3 cups chicken broth. In a frying pan that has a lid cook rice in oil or butter until it turns opaque. Then add the salt, saffron and chicken broth. Bring everything to a boil, then turn the heat to low immediately, simmer for 16 – 20 minutes, until rice is tender. If after 16 – 20 minutes you feel more liquid is needed then add some water. Do not add more than one cup. I recommend small amounts at a time.
