Soft caramels have a smooth and creamy taste to them. To make soft caramels you need the following ingredients: 2 heavy cream, 1/2 cup condensed milk, 2 cups light corn syrup, 1/2 water, 2 cups sugar, 1 stick of softened butter. Line a 9×9 pan with foil and spray. Combine cream and milk in small saucepan, warm, but do not boil! In another pan combine corn syrup, water and sugar over med-high heat. Stir until sugar dissolves. Cook to 250 degrees. Add butter and warm milk mixture. Remove from heat and pour into pan. Allow to sit over night and candy will form.
