Shortbread is a biscuit-like cookie that is traditionally made with butter, flour and sugar, but there are several variations of the recipe to give it more flavor. Here is one you might enjoy: 3 sticks of unsalted butter, softened to room temp, 1 cup sugar, 1tsp pure vanilla extract, 3 1/2 cups all-purpose flour, 1/4 tsp salt. Preheat oven to 350 degrees F. Sift together flour and salt, set aside. Put butter and sugar in mixing bowl, using the paddle attatchment on electric mixer, mix together until combined, add vanilla. Turn the mixer to low speed, add dry ingredients and mix until a dough is formed. Remove from bowl onto a flat surface, dusted with flour and shape into a flat disc. Wrap in plastic wrap and refrigerate for 30 min. Roll out dough to 1/2 inch thickness and cut into ‘fingers’ (3in X 1 in), or use cookie cutter shapes and place on ungreased cookie sheet and sprinkle with more sugar. Bake in preheated oven 20-25 min or until the edges begin to brown. Remove and let cool completely. When cool, dip or drizzle the cookies with melted chocolate and place on a parchment lined cookie sheet, allow to set and serve.
