To make sausages, you will need to buy a sausage stuffing machine. Grind raw pork and fat into coarse pieces and add seasonings such as salt, pepper, and garlic. Put the meat mixture into the sausage machine, slip a casing (pig gut) over the tube and crank away. The meat will fill up the casing. When the sausage is the length you want it, tie it off and go on to the next casing.
