Cook washed rice and allow it to cool completely before putting it in several glass jars. Add 1/2 cup of Koji per jar, 1/2 tsp. of yeast, 1/2 cup of water and 1 tsp. of lemon juice. Cover, place jars in a dark spot and shake daily. After 16 days, strain and enjoy.You can find more information here:
