You can make roasted peppers on your grill. Simply place cover lightly with olive oil and place on the grill grate. Turn peppers as they start to brown. Peppers will be done when they are totally brownish on the outside (skin). Place them in cold water immediately and the skin will peel away. You can also roast peppers in your oven by placing them under the broiler and turning. Roasted peppers can be marinated in garlic and oil for a yummy zing.
