Pepper jelly has many variations, but all of them are great depending on what you and your guests like. It is best as an appetizer with crackers and possibly cream cheese. To make pepper jelly you will need 1 1/2 cups green bell pepper finely chopped, 1 1/2 cups distilled white vinegar, 6 1/2 cups white sugar, and 3 ounces liquid pectin. In a large stainless steel pan, you will want to combine the pepper, vinegar, and sugar. Bring it to a boil while stirring constantly. Next stir in the pectin and boil 3 more minutes, still stirring constantly. Now skim off the foam with a metal spoon and remove your pan from the heat. With a ladle, pour the liquid into clean, sterilized jelly jars, making sure you leave a half an inch of space at the top. Put the lids on the jars and seal them, then process in a boiling water canner for 5 minutes. Once your jelly has cooled, enjoy!
