Rinse your peaches and then cut in half to remove the pits. Places your peaches in a food processor until the mixture is a consistency you like. Add a 1/4 cup of lemon juice, and 7 cups of sugar to 4 cups of the peach mixture, bring to a rolling boil over high heat. Add fruit pectin to the mixture stirring constantly, bring back to a boil and cook for one minute. Remove the mixture from heat and skim any foam from the top, add the misture to your prepared canning jars.
