If you want to make Peach Brandy, you need to plan ahead, and be a patient soul. It takes about 6 months to ferment properly. For best results, you should do this in August. Here’s what you will need:Pits and skins from about 20 peaches (wash peaches before peeling).1 cup sugar2 cups boiling waterFill a quart jar with the pits and skins and make a medium sugar syrup. Pour the boiling syrup over the pits and skins to within 1 inch of the threads. Seal the jar and bury 8 inches underground until late December. When ready, strain and serve.
