An easy recipe calls for these ingredients: 1 cup all-purpose flour, 1 tsp. white sugar, 1 tsp. salt, 1 tsp. baking soda, 2 eggs, 1 cup milk, 1 tsp. vanilla extract, 1 Tbsp. vegetable oil, 1 tsp. margarine, softened. Then, in a bowl, stir together flour, sugar, salt and baking soda. In a separate large bowl, beat together eggs, milk, vanilla, vegetable oil and margarine. Stir dry ingredients into egg mixture; mix until smooth.Heat a lightly oiled griddle or frying pan over medium high heat until a few drops when sprinkled on the pan bounce around and disappear. Spoon the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown once on each side, and serve hot with melted butter and syrup of your choice.
