To make gelato you need 1 C sugar, 2 C milk, 4 egg yolks slightly beaten, flavorings, sauce pan, bowl of ice water, mixer, whisk, candy thermometer, ice cream maker. Melt 1/4 Csugar until golden brown, place pan in cold water to stop cooking. After 5 min return to heat. Add milk and whatever flavoring you choose to use. Mix eggs with remaining sugar then add into mixture. Cook the mixture until candy thermometer reads 140 degrees. Continue stirring for four minutes. Do not allow to boil. Allow to cool completely. Transfer mixture to ice cream maker to freeze. Will keep for about a month.
