Slice the potatoes as thin or thick as you want. If you want, peel them first. When i make them, I leave some skins on, and peel some off. Slice some onion, thinly, and green peppers, thinly. In your skillet, add some canola oil and a few teaspoons of butter. Add your potatoes, onion and green pepper. Stir carefully to coat all with the oil and butter. Cover pan with lid. Allow to brown, however, flip them carefully with your spatula. They are done when they are browned to your liking.
