So ya filo like making a pastry huh? Sift together 2 2/3 cup of flour and 1 tsp salt. Gradually add 1/2 cup warm water stirring to form a thick dough. Turn dough out onto a pastry board. Rub a little oil on your hands and knead the dough (ya know ya gotta need the dough) until smooth and elastic. Place in greased bowl turning to coat; cover with clean cloth and let rest for 2 hours. Separate dough into quarters and roll out to about 1/4 inch thick on a board rubbed with cornstarch. Let rest 10 minutes then stretch to paper thin thickness. Dough is done! Ready for use.
