I use boneless, skinless chicken breast which you would want to wash before using. Use about three pounds and then cut it up into bite size pieces. Put the chicken in a sauce pan and add 1/4 cup of vinegar. Add 1 tablespoon of soy sauce, 1 head of crushed garlic and 8 whole peppercorn that have been crushed. Stir the chicken once the broth has started to boil. Cover the pan and let it simmer for about 30-40 minutes, or until the chicken is done. Remove the chicken from the pan, and fry some butter and garlic in another pan. Once that has browned, add the chicken to it. Once the chicken has browned, add the liquid and let it simmer for about 10 minutes. I usually serve this dish over white rice and a sliced banana on the side for some sweetness.
