Steam 2 cups broccoli floweretts, 1 small diced onion, 2 stalks chopped celery, until tender. Melt 2 Tbsp. butter, add 2 Tbsp. flour. Cook 1 minute stirring continuously. Add 2 cups chicken broth and stir continuously. Bring to a boil. Reduce heat and let simmer. Add salt and pepper to taste. Heat thoroughly, top with grated cheddar and serve immediately.
