To make an omelet combine two eggs, 1 tablespoon water or milt, 1/8 teaspoon salt, and a pinch of pepper. Beat eggs with fork until frothy. In a flared-sized skillet melt 1 tablespoon butter. Add eggs and cook lifting the sides with a spatula to let the uncooked egg run under. When eggs are set, add your favorite topping, such as cheese, to one half of the egg. Fold the egg in half, over topping.
