To make a melt in your mouth sweet potato pie, you will need the following ingredients: 1 pound of sweet potatoes (you can substitute 1 can of sweet potatoes), 1/2 cup of butter (room temperature), 1 cup of sugar, 1/2 cup of milk, 2 eggs, 1/2 teaspoon nutmeg, 1/2 teaspoon vanilla extract and a 8 in unbaked pie crust. After the potatoes have boiled for about an hour, cool with cold water and peel. Add all ingredients in the mixing bowl and beat until smooth. The mixer will remove the strings as well. Fill the pie shell and bake for about an hour at 350. Test the center with a toothpick or knife and if it comes out clean it is done. Serve warm or cool.
