Break six eggs into a mixing bowl. Add 1/4 cup milk and one 6 oz. package of grated cheddar cheese. Add salt and pepper to taste.Melt 2 tbs. butter in skillet over low to medium heat and pour egg mixture into the center of the pan. As mixture begins to settle it will bubble around the sides, so, using a large pancake turner or spatula, flip the egg mix over and allow it to settle on the other side. After a minute or so, the omelet is done and you can slide it out of the pan onto a plate. Voila! A cheese omelet!
