I have to admit that I’m not a fan of eggplant, but I do know how to cook it. Slice the eggplant to your desired thickness and use cooking spray to coat both sides. If you prefer, you could also use olive or vegetable oil. When the grill is heated, arrange the slices, then cook for about 3 minutes per side. You will know the eggplant is done when it is browned on both sides.
