In order to prepare fried eggplant, you would first want to peel your eggplant much in the same way you would peel a potato. Next slice the eggplant to the desired thickness you desire, but no less than 1/4 inch thick. Dip the moistened slices in flour or breadcrumbs, then carefully place them into a skillet containing heated olive oil. Brown on each side evenly, turning as necessary.
