Tomatoes can be frozen as whole tomatoes, sauce or juice. Whole tomatoes should be dropped into a bath of boiling water until the skin begins to pop. Remove carefully, cool and peel away the skin. If you are freezing them as whole tomatoes, proceed to place them into individual bags or freezer containers. Label with a date and place immediately in the freezer. Juice can made by processing in a blender, straining and then freezing. Sauce will require a second cooking process, after the skins are removed, before they can be frozen.
