How to Fillet a Trout?

To fillet a trout, insert the knife behind the ribs toward the outside. Cut as close to the ribs as you can to salvage as much meat as possible. Work your way down to the bottom of the tail. Repeat on the other side. After that is done, take knife and cut down and in toward the backbone of the fish. Do this to the entire length on both sides. If you can hear the sound of the pin bones cracking you are doing it correctly. Next, remove the whole center piece of the trout. You can either pull what pin bones are left out, or leave them in.
