The trick to a perfect turkey, is a moist turkey. First, prepare the turkey and tie the legs together and tuck back the wings. Rub the turkey all over, and under the skin, with butter. Then rub the turkey with your favorite turkey seasoning. Roast your turkey according to its size. A 10 to 18 lb. turkey will take 3 to 3.5 hours in a 325 degree oven. The secret is to continue to baste the turkey with the drippings while it cooks.
