To make easy chicken parmesan, start out with boneless skinless chicken breasts. Lightly grease a rectangular baking dish. Lightly brown the chicken breasts on each side in a skillet, then arrange in a single layer in the baking dish. Top each breast with either sliced or shredded mozzarella cheese, then sprinkle with Parmesan cheese. Spoon thick tomato sauce over each breast and again sprinkle with more Parmesan. Back in a 350 degree oven for 45 minutes or until the chicken is completely cooked. Remove from the oven and allow to cool in the pan for 5 to 10 minutes prior to serving.
