Bok Choy is delicious! This is one of my favorite Bok Choy recipes. First, cook four pieces of bacon until crisp, remove from pan and chop into bite sized pieces. Drain the fat except for approximately one tablespoon and add a teaspoon of olive oil, a half of a diced red onion, a teaspoon of red pepper flakes and a teaspoon of minced garlic. Once the onions start to soften add two pounds of chopped Bok Choy and cover for five minutes. Remove the lid and stir occasionally until the Bok Choy is as tender or crisp as you desire. Add the bacon back to the pan, salt if desired, and enjoy.
