To make a beef wellington, first heat a skillet and add some olive oil to the pan, and let it heat up to medium-high heat. Next, add oil, butter, shallots or onions, and finely chopped mushrooms to the skillet. Season the mixture with salt and pepper after letting it cook together for five minutes. Remove the mixture from the heat once they are cooked through. Next smear the meat with a few drops of the oil and then sear it on both sides until each side of the meat is browned evenly. Season with salt and pepper and then remove it from the heat. Cut phyla dough into four even pieces so that it covers an individual serving of beef. Then cut the meat into four even pieces and place it onto the center of the dough. Divide a mousse pate into four equal pieces and place it on top of the meat. Then spread the shallot and mushroom mixture equally on top of each piece of meat and fold the dough over the meat, covering the individual pieces. Bake the covered wellingtons for 10-15 minutes until they are golden brown.
