Beef tips and rice is a favorite around my house. Slice a thin beef steak into bite size strips. Dice an onion and saute it in oil. Then cook the beef until it is about medium rare to medium. Remove the beef from the pan and add enough flour to soak up the grease in the pan. Make sure to cook the flour for a full minute before adding any liquid. This gets rid of that raw flour taste. Then slowly add water until the gravy is at a consistency that you like. Place the onions and beef back into the gravy and let it simmer for about 10 minutes.
