Clean the rabbit first and then soak in salted water for about thirty minutes to an hour. Cut the rabbit in to serving sizes similar to cutting up a whole chicken. You will need the following ingredients: onions (4-6) chopped, bay leaf (1-2), celery (1 cup), salt (2 tsp), diced carrots (2-3 cups) potatoes (3-4) cut, flour (3 tbs) and parsley (1-2 tbs). Place the rabbit, along with onions, bay leaves, celery and salt. in a large pot and cover with water, cook on low heat for about 1/2 to 2 hours. Add the rest of the ingredients except the flour. Add the flour and stirring in between to remove lumps. Cook until vegetables are done, top with parsley.
