How to Clean a Duck?

This is not for the weak at stomach! First one must lay the bird(duck) flat on its’ back. Preferably on the ground or a hard surface such as a ice chest. Secure the bird with one hand while ripping the skin from the breast to get down to the meat. Then while leaving the head on, cut off one wing off, leave one on for identification purpose. Then you skin the back. Cut along the inside of the two back bones with your fillet knife. Oh remember, leave the head on.Ok, now, once cutting along the two back bones, by cutting along the edge of the neck of the duck. Lastly hold the bird by the head or the neck, pulling everything away, leaving you with a breast and one wing. The rest is up to you! Happy Hunting. For more information see here:
