To bake, or roast, a moist, perfect turkey, first rinse and pat dry the turkey. Tie the legs together and tuck back the wings. Rub the turkey all over, and under the skin, with butter. Then rub the turkey with your favorite seasoning. Roast your turkey according to its size. A 10 to 18 lb. turkey will take 3 to 3.5 hours in a 325 degree oven. The secret is to continue to baste the turkey with the drippings while it cooks.
