The correct way to bake a cheesecake so it does not crack is to; cover the bottom of the spring pan with aluminum foil so the foil is on the sides of the pan as well. Place spring pan in a baking pan and add water to the baking pan, about 1 inch. The water in the pan will keep the cheesecake from cracking by releasing steam in the oven to keep it moist.
