There are several types of potatoes. Blue potatoes for steaming, baking and boiling, White potatoes great for making potato salad, fingerling potatoes good for roasting, boiling and baking, russet potatoes are best when baked or boiled. The red potato is good for au gratin, scalloped, roasting and boiling and the yellow potato is best for mashing steaming, baking, boiling and roasting.
