Cornish hens only take about 1 1/2 hours in a 375 degree oven. Season the hens and place on a roasting pan and brush with olive oil. Over lightly with foil and place in the oven for 30 minutes. Remove foil and baste with a mixture of 1/4 cup white wine, 1 tbsp. melted butter, and 2 tbsp. orange juice. Return to roast for 1 hour, basting twice.
