Poaching is an easy cooking method that adds little to no fat to your meal. First choose your cooking liquid. You can use fat free chicken or vegetable stock, white wine or fruit juice and add any herbs you would like. You are only limited by your imagination. Put your chicken into a pot and cover with liquid by about an inch. Bring the pot to a boil, cover, and then turn down the heat to simmer for 10 minutes. Turn off the heat and allow the chicken to remain in the covered pot for another 10 minutes. Poached chicken is a delicious addition to pasta or green salads. Enjoy!
