To make tamales the first thing you will need to do is to cut your pork up into one inch chunks. Then simmer the pork for a couple of hour’s until it becomes tender. Now for the most time consuming part of it all. Take your stock pot and add 96 oz of chicken broth, 1/3 cup chili powder, 3 tbsp of cumin, 2 heaping tbsp of garlic powder, 1 tsp of salt, 1 tbsp of chicken base and 2 triangles of Ibarra chocolate. Heat to boiling then cover and simmer on low. Add the cut up pork to the boiling sauce, partially cover and simmer on low for approximately 2 hours or until pork is very tender. You can also use shredded pork in your tamales instead of chunks if you prefer. Mix in a bowl 3/4 cup cold water and flour with a whisk until blended. well. Now you will want to add this to your pork slowly. Stir slowly as you’re adding the flour mixture making sure that you have no clumps. Once you have your mixture in with the pork and is thoroughly mixed turn the stove off. Next thing you will need to do is to soak your corn husks in warm to hot water in a bowl for 30 minutes. Next we need to make our masa. Take a bowl and place 4 cups of MaSeCa instant corn Masa mix, 3 tsp sea salt, and 1/2 tsp garlic powder and mix together. Next you will need to add 1 cup fresh corn oil and mix thoroughly. Now you will add 1/2 cup at a time of chicken broth mixing it thoroughly as you go. You will use approximately 2 1/2 cups of chicken broth. Your masa should have a consistency of cookie dough. Next take your corn husks and open then carefully without tearing them. Pat the corn husks so they are dry and spread the masa on the inside of the corn husk leaving the pointy end without masa so that you’re able to fold it over. Now you will take your pork and place it down the center of the corn husk on top of the masa. Now roll your corn husks up, making sure that all the pork stays inside of the corn husk. After the husk is rolled fold the pointy end over. Continue to make your tamales until all your pork mixture and masa is gone. Once you have all your tamales made place them standing upright into a steamer. Steam for approximately 1 1/2 hours. Enjoy!
