To make rose water, start with 2-3 quarts of fresh roses or rose petals, water and ice cubes. Place a brick in the middle of a large pot and place a bowl on the brick. Add roses to the pot until they reach the top of the brick. Pour enough water into the pot to cover the roses, reaching just over the top of the brick. Place the lid upside down on the pot. Bring water to a rolling boil then turn down to a steady simmer. When water begins to boil, place 2 or 3 trays of ice on the top of the lid. As the water condenses, it will drop into the bowl. Every 20 minutes take out a tablespoon or two of the water from the bowl. Stop when you have between a pint and a quart.
