To make a meringue you will need to make sure you carefully separate your eggs. Any yolk in the mixture will make it difficult to whip the meringue. Let your egg whites come to room temperature and mix with an electric mixer. Add 1/4 teaspoon of cream of tartar and a small pinch of salt. Beat this mixture until soft peaks form. Mix in 2/3 cup sugar, a bit at a time, until stiff peaks form. Use meringue to top your favorite pie or in other desserts. Delicious!
