To make country gravy heat 1/4 cup vegetable oil in a large skillet over medium heat. Whisk in 3/4 cup all-purpose flour, 1 tsp. salt, and 1 tsp. black pepper until smooth. Cook and stir over med heat until browned, about 10 minutes. Gradually stir in 4 cups milk. Cook and stir until thickened. If the gravy becomes too thick, think with more milk.
